Irish Pub Potato Nachos Recipe

This Irish pub-inspired twist on the classic snack is piled high with your favorite nacho toppings while still staying in line with your healthy meal plan. How to Make Irish Pub Potato Nachos

To make them, soak quarter-inch slices of russet potatoes in a bowl of water for 20 minutes. Pat them dry, then toss them in olive oil and taco reasoning. Arrange the potato slices on a baking sheet in a single layer. Back them at 450 degrees for 15 minutes. Flip them over and bake for another 12 to 15 minutes. 

Once your potato “chips” are done baking, layer half of them in an oven-safe pan or cast iron skillet. Top them with reduced fat shredded cheddar cheese and low-sodium turkey bacon (cooked and chopped).

Finally, garnish your nachos with the remaining toppings, including light sour cream, guacamole, pico de gallo, sliced green onions, sliced black olives, sliced jalapenos and chopped cilantro.

  6. Bake for 3-4 minutes, until cheese has melted.
  7. Top nachos with sour cream, guacamole, pico de gallo, green onions, olives, jalapenos and cilantro.
