Easy Fresh Fruit Tart Recipe

If there was a contest for the prettiest dessert, we’re pretty positive that the fruit tart would take home the win. With its creamy custard nestled into the sweet, crumbly crust and adorned with fresh fruit, it’s a beautiful baked good that tastes as good as it looks! In true Nutrisystem fashion, we’ve remade the classic fruit tart into a weight loss-friendly treat with a few simple swaps and a whole lot of love. Celebrate summer with this Easy Fresh Fruit Tart recipe that fits into your meal plan!

The first step to making our healthy fruit tart is preparing the tart crust. We use a combination of whole wheat flour and dry rolled oats as the base. To get the oats ready, all you have to do is process them in a food processor until they are fine. Add in the whole wheat flour, brown sugar, light butter and cream cheese, then process again until the ingredients are combined. You’ll need to add a little moisture with two tablespoons of water before mixing the dough with your hands. Now that your dough is ready, press it into a greased tart pan and bake it at 375 degrees for 12 minutes. Let it cool completely while you work on the filling.

The tart filling in this recipe is a vanilla-flavored mixture of cream cheese, sugar free instant vanilla pudding mix and nonfat milk. Blend all three of these ingredients together in a food processor or blender until thick and creamy. Pour the filling into the cooled tart crust, cover it with a lid and chill for two hours so it can firm up.

Next, you’ll top the tart with your fruit of choice. You can use any combination that you enjoy! Use sliced kiwi, chopped mango or some orange segments. Fresh berries like blueberries, strawberries, raspberries and blackberries are also delicious options. Feel free to also create a pretty design with the fruit. Once you’re happy with your fruit placement, you’ll whip up a quick and easy glaze with a warmed up fruit jam (use any flavor you like!) and a little bit of water. Brush the jam mixture on top of the fruit to add some shine. Finally, refrigerate your Fresh Fruit Tart for at least one hour before serving.
